My wonderfully fantastic Aunt Susie is growing all kinds of fresh herbs this summer and has been sweet enough to hook me up with some! I wanted to do something with them today so here's a recipe I threw together. (Keep in mind I don't measure anything, but for you "need to measure" types, I guesstimated amounts.)

Chicken Sammie w/ Goat Cheese and Herb Mayo
INGREDIENTS:
- Two slices of bread
- One boneless, skinless chicken breast
- 1/2 tsp. blackening seasoning
- 1 cup mayo
- 2 tsp. fresh lemon juice
- 1/2 tsp. garlic powder
- 3 tbsp. fresh chopped basil
- 2 tsp. fresh chopped oregano
- 1 tsp. fresh chopped rosemary
- 1/2 oz. goat cheese
- 4 grape tomatoes, halved
- Small handfull of mixed greens
- Salt & pepper to taste
Step 1 -- Make herb mayo:
Mix together the mayo, fresh lemon juice, a dash of salt and pepper, the garlic powder and the fresh herbs. Let the herb mayo sit in the fridge for at least an hour or two to let the flavors get friendly with each other. (Otherwise the lemon will knock your teeth out!)
Obviously you will have a lot of mayo leftover, so store it in the fridge for another day. Use within a week, I'd think. Would also be great with a steak or grilled fish sandwich or in place of regular mayo in chicken salad.
Step 2 -- Cook seasoned chicken breast:
Season the chicken breast with blackening seasoning, salt and pepper. Cook it either in a skillet (with cooking spray) on the stove or grill.
Step 3 -- Assemble:
Toast two pieces of bread and schmear one side liberally with the herb mayo and the other with the goat cheese. Place the hot chicken breast on top of the cheese to let it soften and melt a little. Press the grape tomatoes cut-side down into the mayo and then top with the mixed greens. Now dig in!
(This would be amazing with ciabatta bread or something like that, but I always have a hard time keeping fresh bread around since we don't eat a lot of it. White sammie bread toasted works just fine.)

In upcoming news, I'm having dinner with my cousins Erin and Andi tonight to celebrate our birthdays (Andi turned 27 on July 20 and Erin and I turn 30 on Aug. 1 and Aug. 3, respectively). Then we're going to Andi's to watch "Confessions of a Shopaholic" -- I'm looking forward to our girl time! Also, Isaiah's and my friend Lindsey from College Station is here in LBK this week doing an internship so we're hoping to have her over some night for dinner.
Thaaaat's about it for the time being.......NOW GO MAKE SOME HERB MAYO! :)
